Healthy Snacking!

I like to snack between meals so I try to choose snacks that have nutritional value. Fruit is alway a favorite but there are many other options.  Popcorn topped with nutritional yeast is both healthy and delicious. (It might even trick me into thinking I'm eating fun food.) Popcorn is a good fiber source and nutritional yeast is a complete protein plus it is full of B vitamins. What is nutritional yeast you may wonder? Wikipedia has the answer:

Nutritional yeast is a deactivated yeast, often a strain of Saccharomyces cerevisiae,which is sold commerically as a food product. It's sold in the form of flakes or as a yellow powder similar in texture to cornmeal, and can be found in the bulk isle of most natural food stores. It is a source of protein and vitamins, especially the B-complex vitamins and is a complete protein.
It is also naturally low in fat and sodium and is free of sugar,dairy and gluten. Sometimes it is fortified with Vitamin B12.

Roasted Kale or Asparagus
 Another warm, crunchy idea is roasted veggies. I cut up thin asparagus, put them in a plastic storage bag with a teaspoon of olive oil (which lightly coats them), then spread them onto a cookie sheet. I bake them at 400 degrees until crispy. As a final touch, I add some sea salt. Wonderful!  You can do the same thing with Kale. Misting the olive oil on Kale works best because it is easier to control the amount  used. Nutritional yeast is good on both of these veggies too!
